Taltarni 2006 Three Monks Tasting notes:
Grapes for the Taltarni Three Monks Cabernet Merlot 2006 were sourced entirely from Taltarni's Pyrenees vineyard. 2006 was a dry, warm vintage with lower yields producing ripe, concentrated fruit that was harvested two weeks earlier than expected. Cabernet and Merlot are classic blending partners with the Cabernet providing length and structure and the Merlot adding softness and midpalate weight. A small amount of Petit Verdot has been included for added richness and texture.

Cephas is a wine with no compromises. Hand selected from the estates best
fruit parcels - components are basket pressed, fermented in small open top
fermenters and others part fermented in barrels. been matured for 20 months
in French oak.
The final blend is a wine of flawless balance and impeccable structure
which delivers the expected voluptuous, rich and full-bodied profile of the
very best of the Pyrenees.
Cephas' remarkable structure makes it an excellent wine to enjoy now, but
continuing the great tradition of Taltarni wines, it will also cellar with
style for years to come.
