Grilled Scampi
Drink with Petit Chablis
4 people as an entree.
Ingredients
24 whole scampi
1 small chilli (optional)
2 lemons
175gm butter
Salt and pepper
Handful of flat leaf parsley
Method
1. Cut the scampi in half lengthways and lay out in a single layer on a tray.
2. Into the softened butter add the finely grated pith of both lemons, and the juice of 1. Finely chopped chilli, finely chopped parsley and salt and pepper can be added at this stage.
3. Mix these ingredients together and taste for seasoning. Add more lemon juice, seasoning, or chilli as desired.
4. Spoon a small amount of the butter mixture onto each scampi.
Grill scampi under a griller for about 2 minutes or until just cooked. Be careful not to overcook.
Serve scampi immediately with homemade aioli and freshly squeezed lemon juice.
