Our one-night Palate Trainer is an intimate class conducted by Phil Hude designed for both the novice and connoiseur.
This 2-hour class will help you gain a better understanding of your own palate and teach you how to pick out specific wine faults which occur in 1 out of 12 bottles. Learn what TCA (cork taint) smells like, fully understand the differences between bitterness, acidity, tannin, etc. A fantastic class for those just getting started, but also a great refresher for those who've been tasting for years.

Our 5 week Intro to Wine Course has been rated Melbourne's Best*.
Join us as we learn and taste across all facets of wine appreciation including a week each on Champagne, White, Red, Fortified and Ageing.
This interactive wine course covers a broad range of wine topics directly related to the process of winemaking from vine to bottle. Learn the subtleties and nuances of the different styles. Each week includes a a varied selection of interesting wines to complement the seminar, with a view to giving each participant a clear understanding of the concepts of flavour and the ability to discern the characters which constitute complexity and style.

Week 1:
Sensory Evaluation, Palate Construction and Sparkling Wines and Champagne
Week 2:
Vineyard to Winery / White Wines
Week 3:
Winemaking Processes & External Winemaking Practices / Red Wines
Week 4:
Desert Style /Fortified Wines / Regions & Varieties
Week 5:
Aged Wines / The Synergy of Wine and Food / The Art of Wine Purchasing and Cellaring
On week 5, the group visits a local restaurant where a wide range of styles are looked at with food.

Intermediate Red Wine Course:
Over
the four weeks we will
-
- Review
and assess each of the dominant (new world) red varietals: Pinot,
Merlot, Cabernet Sauvignon and Shiraz.
- Discern
between the regions these wines hail from: understand first hand why a
Shiraz from the Barossa Valley tastes different from a Shiraz from the
Hunter Valley, or a Syrah from the Rhone
- Discern
specific varietal traits using the latest olfactory kits
- Including
an assessment of the nuances in aroma and oak treatment
- The
course will assess both Old and New World wines; however the focus will
be on Australian wines. Each night will include as assessment of six
to ten premium wines.
An
intermediate level of learning* is required to attend Armadale Cellar's "Intermediate
Red Wine Course". The

Intermediate White Wine Course:
Over
the four weeks we will

from the Margaret River tastes differnent than from Marlborough
New Zealand.

Join us for an introduction/refresher into traveller's French for those of you lucky enough to be going to France (or who dream of going)
Yveline has years of experience in teaching and working as an interpreter of the French language around the world. She has been employed as an Interpreter for the French Embassy and several Corporations in Australia. She is also employed as a private tutor and thoroughly enjoys teaching her native tongue.
