100% Chenin blanc grown over the tufa - chalky limestone of Saumur.  Wild fermented in concrete vats, then rested a further 8 months in concrete before bottling.

A gorgeous and widely appealing white - flavour-wise think white flowers and a broad citrus spectrum.  Its texture and shape are what make it particularly attractive, with a broad but defined attack.  There's certainly chalkiness to its texture and mineral profile, and also a hint of volcanic rock.  Bright, energetic and a lot going on.
